Today I was reminiscing about food available in Colorado Springs and not so much here and my favorite lunch spot, Wahoo's Fish Tacos creeped into my mind. Now fish tacos...so not my thing. Fish is gross...unless it's fried with a lemon-butter type sauce. Fish tacos aside, I was much more into the Maui Steak Bowl and Teriyaki Chicken Bowl. So today, with a plethora of black beans on the shelf, I decided to try the Teriyaki Chicken Bowl, without teriyaki sauce because I'm out...So with fingers crossed, I foil wrapped a large frozen chicken breast, heated the oven to 375, and let it bake for 45 minutes. During this time I combined 2 cups of boiling water, 1 cup brown rice, 1 tbs butter and 1/2 tsp of salt stove top for about 50-55 minutes as well. Then about 30 minutes later, in another saucepan, heat up 2tbs of olive or veg. oil and if you want rice vinegar as well. Dice up some red and green bell peppers to put in there, and then add a can of rinsed black beans. Set on low-medium heat and cover, stirring occasionally. Then after 40-45 minutes, pull chicken out, open foil and add a good amount of soy sauce or teriyaki. Not too much that it will spill over the foil, but enough to cover the whole breast. Fold foil back up and put in oven for additional 10 minutes. Dice up chicken into bite sizes and add it to bean and pepper mix. Keep on low heat and covered until rice is done. Then put your rice in a bowl, and top it off with the chicken and bean mixture and add some more soy or teriyaki sauce.
So that was lunch today =) Sorry there's no picture, I was too hungry to think of that before scarfing it all down! But that's ok, you can just go to Wahoo's and see for yourself!
